Use about 3/4 cup of honey for every 1 cup of granulated sugar. Then reduce the recipe's other liquids by about 1/4 cup, add roughly 1/4 teaspoon of baking soda to offset honey's acidity, and lower the oven by 25F. Those four adjustments together handle cakes, muffins, quick breads, and most cookies. Weighing is more accurate than measuring by volume, since a cup of honey weighs about 12 ounces against sugar's 7.
why do you lower the oven temperature when baking with honey
Because honey browns faster than sugar. Honey is high in fructose, which caramelizes at a lower temperature than sucrose, and its simple sugars also accelerate Maillard browning. At a normal oven temperature the surface colors and can burn before the center sets. Dropping 25F and checking about ten minutes early solves it; tenting with foil handles anything that still gets ahead.
can you substitute honey for sugar in any recipe
Not any. It works beautifully in quick breads, muffins, gingerbread, yeast breads, granola, and chewy cookies. It removes what makes an expensive honey distinctive rather than making it unsafe. The exception is dark honey in dark baking: buckwheat or avocado honey keeps enough malt and molasses character through the oven to be worth choosing for gingerbread or rye bread.

Make honey syrup first. Stir equal parts honey and warm (not boiling) water until fully dissolved, then keep it in a squeeze bottle in the refrigerator. Cold honey will not dissolve in a cold drink and will simply sink and clump. The same syrup is what bartenders use for honey cocktails, and it mixes instantly into dressings, lemonade, and marinades.
can babies eat food baked with honey
No. Honey should not be given to a child under 12 months in any form, and that includes honey baked into bread, muffins, or cookies. Honey can contain dormant bacterial spores that an infant's immature digestive system cannot control, and baking is not a reliable way to eliminate that risk. The rule applies to all honey, raw or processed. After the first birthday, honey is treated like any other food; ask your pediatrician about your own child.
